Slow Cooker Greek Lamb

Preparation Time: 15 Minutes

Cooking Time: 3-6 Hours

Serves: 4

Ingredients:

  • 3 Tbsp Olive Oil
  • 1kg Rolled Lamb Loin
  • 1kg Potatoes-Peeled & cut into 8ths
  • 1 Bunch of Rosemary
  • 1 Head of Garlic
  • 1/2 Cup of Dry White Wine
  • 1/2 Cup of Lemon Juice

Method:

  1. Peel 6 Cloves of garlic & slice. Cut slits into the skin of the lamb & push garlic into the pockets
  2. Heat oil in a frying pan & sear lamb all over
  3. Push slits of rosemary into the slits where you placed the garlic
  4. Place potatoes into the base of the slow cooker, Lay 2 stalks of rosemary on top, Place lamb loin on top of rosemary
  5. Pour the wine & lemon juice over the lamb & potatoes
  6. Place slow cooker lid on & cook for 3 hours on high or 6 hours on low

TIP!!

  • For Extra Flavour: Add the lemon halves into the pot with extra garlic for that wow factor
  • For Extra Crunch: After slow cooking the potatoes, remove them & pan fry them until crispy golden brown in some olive oil
